Bees produce spring honey from nectar of flowers in gardens and meadows, mostly dandelions and rape. Spring honey can be a powerful weapon in the fight against colds, as it has many antibacterial properties. It is also believed to be one of the least allergenic, so it is recommended that children who have not tasted honey should be given it.

Spring honey is white honey. Well, almost white - a soft ivory colour. It has a runny consistency and sets quickly, but has a very pleasant creamy consistency and almost no aftertaste. If you like to cook a lot and want a healthier alternative to sugar, this honey can be a great choice, especially if you don't want to give the product a specific honey flavour (as with buckwheat honey).

Our ancestors already knew about the beneficial properties of this honey and used it to treat not only colds, but also skin wounds, digestive ailments, depression, etc. It contains hydrogen peroxide, a natural antibacterial agent that inhibits the growth of micro-organisms and promotes wound healing. These properties are also the reason why honey is used in cosmetics or homemade skin care products: it is soothing and nourishing without greasing the skin, making it suitable for all skin types.

Spring honey is the very first honey collected at the beginning of the bee season. Only the bees who collected it can tell its exact composition, as scientists have not yet tested this little nut. One thing is for sure: the honey will vary slightly in composition from one comb to another, not to mention from one apiary to another. The beekeeper who sells the honey can roughly tell which nectar is predominant in the honey collected (more fruit trees, rapeseed or meadow plants), taking into account the location of the hives.

Spring white honey is probably the most mood-lifting honey and the one that helps to banish negative thoughts. It gives you a taste of gardens bursting into bloom and the hot sun, and a little bit of wind and the buzzing of bees.
